Nephele

Located in Ho Chi Minh City, Nephele is a restaurant featured in the Michelin Guide. Located in the alley of a newly renovated building steeped in history, this dinner-only restaurant serves a single tasting menu. The menu, made with ingredients that the chef selects from diverse regions, is perfectly paired with wine or non-alcoholic drinks. The experience begins on the ground floor, moves upstairs to the elegant main dining room, and ends back at the bar with mignardises served to the sound of vinyl records. A standout is the 36-hour fermented sourdough bread, charcoal-baked to a crisp finish and served with honeycomb, truffle butter and miso made from the bread.
